Content | The teaching of animal physiology is a fundamental basis for understanding the physiological phenomena involved in human nutrition. a. Understanding the physiology of digestion as well as tissue and cellular nutrition, and situating their roles and interactions within the major physiological functions of the body. b. Analyzing the physiological phenomena within the biological matrices that make up animal-based foods, by addressing the tissue and cellular processes involved in raw materials such as meat, fish, meat products, eggs, and egg-based products. At the end of this course, students will be able to explain physiological phenomena, understand their origin, mechanisms, and implications. |
